These Chicken Avocado Lettuce Wraps are a fresh, low-carb dinner option that's quick and easy to make. Using rotisserie chicken, creamy avocado, and Greek yogurt, this recipe is packed with protein and healthy fats, making it a satisfying and nutritious meal. YOU WILL NEED:
1 cup rotisserie chicken, shredded
1 ripe avocado, diced
2 tbsp Greek yogurt (or sour cream for extra creaminess)
1 tbsp fresh lime juice
1/2 tsp garlic powder
Salt and pepper, to taste
6 large lettuce leaves (Romaine or Butter lettuce works well)
Optional: Chopped cilantro, diced red onion, or a sprinkle of chili flakes for extra flavor
INSTRUCTIONS:
In a bowl, combine the shredded rotisserie chicken, diced avocado, Greek yogurt, lime juice, garlic powder, salt, and pepper.
Mix everything gently until combined. If desired, add chopped cilantro, red onion, or chili flakes for an extra kick.
Lay out the lettuce leaves on a flat surface and spoon the chicken and avocado mixture into the center of each leaf.
Fold the sides of the lettuce leaf around the filling to create a wrap.
