Lemon Garlic Chicken with Roasted Broccoli

YOU WILL NEED:

  • 2 chicken breasts (skinless and boneless)

  • 2 cups broccoli florets

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • Juice of 1 lemon

  • Zest of 1 lemon

  • 1 teaspoon dried oregano

  • Salt (to taste, but use sparingly)

  • Fresh ground black pepper (to taste)

  • 1/2 teaspoon paprika (optional)

  • Fresh parsley, chopped (for garnish)




INSTRUCTIONS:

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, combine the olive oil, minced garlic, lemon juice, lemon zest, oregano, paprika (if using), salt, and pepper.

  3. Place the chicken breasts on a baking sheet lined with parchment paper. Brush the chicken with the lemon garlic mixture, making sure to coat both sides evenly.

  4. Add the broccoli florets to the baking sheet around the chicken. Drizzle the remaining lemon garlic sauce over the broccoli and toss to coat.

  5. Roast in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the broccoli is tender and slightly crispy.

  6. Garnish the chicken and broccoli with freshly chopped parsley before serving.

Serving Suggestion: Serve the chicken with a side of quinoa or a simple green salad to add extra fiber and nutrients.
