Herb-Crusted Roast Beef with Garlic Roasted Vegetables

Packed with flavor, this Herb-Crusted Roast Beef with garlic roasted vegetables is a hearty, low-carb meal that’s perfect for any occasion. The savory roast paired with tender, crispy vegetables makes for a satisfying and nutritious dish that’s easy to prepare. A delicious way to enjoy a balanced meal full of rich, natural flavors!






YOU WILL NEED:

  • 1 (3-4 lb) boneless beef roast (sirloin or ribeye)

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste

  • 1 medium zucchini, sliced

  • 1 cup Brussels sprouts, halved

  • 1 red bell pepper, sliced

  • 1 tablespoon olive oil (for vegetables)

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Fresh parsley for garnish (optional



INSTRUCTIONS:

  1. Preheat your oven to 400°F (200°C).

  2. In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, Dijon mustard, salt, and pepper. Rub this mixture all over the beef roast, coating it evenly.

  3. Heat a large oven-safe skillet over medium-high heat. Sear the roast for 2-3 minutes on each side until browned.

  4. Transfer the skillet to the oven and roast the beef for about 50-60 minutes for medium-rare (or longer, depending on your desired level of doneness). Use a meat thermometer to check the internal temperature (130°F for medium-rare, 140°F for medium).

  5. While the roast is cooking, toss the zucchini, Brussels sprouts, and bell pepper in 1 tablespoon olive oil, garlic powder, onion powder, salt, and pepper.

  6. After 30 minutes of roasting the beef, add the vegetables to the oven, spreading them around the roast. Continue to roast for the remaining time, until the vegetables are tender and slightly caramelized.

  7. Remove the roast from the oven and let it rest for 10-15 minutes before slicing.

  8. Serve the sliced roast beef with the roasted vegetables, garnished with fresh parsley if desired.

Serving Suggestion: Pair with a side salad or cauliflower mash for a complete low-carb meal.
