Cheese & Spinach Egg Muffins

Start your day with these delicious cheese and spinach egg muffins! Packed with protein, fresh spinach, and melted cheddar, they're a perfect low-carb breakfast to keep you full and energized throughout the morning.
YOU WILL NEED:
6 large eggs
1 cup fresh spinach (chopped)
1/2 cup shredded cheddar cheese (or any cheese of your choice)
1/4 cup diced bell pepper (optional)
1/4 cup onion (optional)
1 tbsp olive oil
Salt and pepper to taste
1/2 tsp garlic powder (optional)
INSTRUCTIONS:
Preheat your oven to 350°F (175°C).
Lightly grease a muffin tin with olive oil or non-stick spray.
In a skillet, heat the olive oil over medium heat. Add the chopped spinach (and bell pepper or onion, if using) and sauté for 2-3 minutes until the spinach wilts and the vegetables are tender.
In a mixing bowl, whisk the eggs and add the shredded cheese, garlic powder, salt, and pepper.
Stir in the sautéed spinach and vegetables.
Pour the egg mixture evenly into the muffin tin, filling each cup about 2/3 full.
Bake for 15-20 minutes, or until the eggs are fully set and slightly golden on top.
Let the muffins cool for a few minutes before serving.
TIPS:
You can store these muffins in the refrigerator for up to 4 days.
Feel free to customize with other low-carb vegetables like zucchini, mushrooms, or tomatoes.
These muffins are great for meal prep and can be eaten on the go!
