Zucchini Noodles with Avocado Pesto

This fresh and vibrant zucchini noodle dish is paired with a creamy avocado pesto that’s rich in healthy fats and flavor. It's a satisfying low-carb alternative to traditional pasta, perfect for a light yet fulfilling dinner.
YOU WILL NEED:
2 medium zucchinis, spiralized into noodles
1 ripe avocado
1/2 cup fresh basil leaves
1/4 cup pine nuts (or walnuts for a budget-friendly option)
2 cloves garlic
2 tbsp lemon juice
1/4 cup olive oil
Salt and pepper, to taste
1 tbsp nutritional yeast (optional, for a cheesy flavor)
INSTRUCTIONS:
Prepare the Zucchini Noodles: Spiralize the zucchinis to create noodle-like strands. You can also use a vegetable peeler to create thin strips if a spiralizer isn’t available.
Make the Avocado Pesto: In a food processor or blender, combine the avocado, basil, pine nuts, garlic, lemon juice, olive oil, and nutritional yeast (if using). Blend until smooth and creamy. Season with salt and pepper to taste.
Combine the Noodles and Pesto: In a large bowl, toss the zucchini noodles with the avocado pesto until fully coated.
Serve: Garnish with extra pine nuts or fresh basil if desired. Serve immediately for the freshest flavor.
Serving Suggestions: Serve with a side of roasted Brussels sprouts or a mixed greens salad for extra fiber and nutrients.
