Greek Chicken Salad Lettuce Wraps

These Greek Chicken Salad Lettuce Wraps are a light, protein-packed lunch perfect for taking to work. Made with tender shredded chicken, creamy Greek yogurt, crisp cucumbers, juicy tomatoes, and tangy feta, this recipe delivers bold Mediterranean flavors without the carbs. Wrapped in refreshing romaine or butter lettuce, these wraps are a fresh, satisfying, and easy-to-pack meal.
YOU WILL NEED:
1 cup cooked shredded chicken (rotisserie works great!)
¼ cup Greek yogurt (or mayonnaise for a richer option)
¼ cup diced cucumber
¼ cup halved cherry tomatoes
2 tbsp crumbled feta cheese
1 tbsp chopped red onion
1 tbsp chopped kalamata olives (optional)
½ tsp dried oregano
½ tsp garlic powder
Salt & pepper to taste
4 large lettuce leaves (romaine, butter, or iceberg)
INSTRUCTIONS:
In a mixing bowl, combine shredded chicken, Greek yogurt, cucumber, cherry tomatoes, feta cheese, red onion, and olives (if using).
Season with oregano, garlic powder, salt, and pepper. Stir until well combined.
Lay out the lettuce leaves and divide the chicken mixture evenly among them.
Wrap or fold the lettuce leaves around the filling, securing with toothpicks if needed.
Enjoy immediately or pack in a lunch container with an ice pack for a fresh, healthy meal at work!
