Low-Carb, Low-Sugar Cheesecake

This Low-Carb, Low-Sugar Cheesecake is the perfect indulgence for anyone craving a rich, creamy dessert without the carbs or sugar. Made with a simple almond flour crust and a smooth cream cheese filling, it’s a healthier way to enjoy a classic favorite!









YOU WILL NEED:

  • Crust:

    • 1 cup almond flour

    • 2 tbsp unsweetened cocoa powder (optional, for a chocolate crust)

    • 2 tbsp erythritol or stevia (adjust based on sweetness preference)

    • 1/4 cup melted butter

    • 1/2 tsp vanilla extract

  • Filling:

    • 16 oz cream cheese, softened

    • 1/2 cup sour cream

    • 1/4 cup powdered erythritol (or sweetener of choice)

    • 2 large eggs

    • 1 tsp vanilla extract

    • 1/4 cup heavy cream

    • 1 tbsp lemon juice (optional, for added flavor)




INSTRUCTIONS:

  1. Prepare the crust:

    Preheat the oven to 350°F (175°C). In a medium bowl, combine the almond flour, cocoa powder (if using), erythritol, melted butter, and vanilla extract. Stir until well combined. Press the mixture firmly into the bottom of a greased 9-inch springform pan. Bake for 8-10 minutes, then remove from the oven and allow to cool while you prepare the filling.

  2. Make the filling: In a large bowl, beat the softened cream cheese until smooth using an electric mixer. Add the sour cream, erythritol, eggs, vanilla extract, heavy cream, and lemon juice. Continue mixing until smooth and creamy.

  3. Assemble and bake: Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.

  4. Cool and chill: Allow the cheesecake to cool at room temperature for about an hour. Then, refrigerate for at least 4 hours, preferably overnight, for the best texture.

  5. Serve: Once chilled, slice and enjoy! For a decorative touch, serve with fresh berries or a drizzle of sugar-free chocolate sauce.
