YOU WILL NEED:

  • 4 large eggs

  • ¼ cup heavy cream

  • ½ cup bell peppers, diced (red, yellow, or green)

  • ½ cup baby spinach, chopped

  • ¼ cup mushrooms, sliced

  • ¼ cup shredded cheddar or feta cheese

  • 1 tbsp butter or olive oil

  • ½ tsp garlic powder

  • ¼ tsp salt

  • ¼ tsp black pepper




INSTRUCTIONS:

  1. Whisk the Eggs – In a bowl, whisk together eggs, heavy cream, garlic powder, salt, and black pepper.

  2. Sauté the Veggies – In a skillet over medium heat, melt the butter or heat the olive oil. Add bell peppers and mushrooms, cooking until softened (about 3-4 minutes). Stir in spinach and cook for another minute until wilted.

  3. Cook the Eggs – Pour the egg mixture over the vegetables. Let it set slightly, then gently stir with a spatula, cooking until just firm but still soft.

  4. Add Cheese – Sprinkle shredded cheddar or feta cheese over the scramble, allowing it to melt. Remove from heat.
