Start your day right with this Keto Veggie & Cheese Scramble—a high-protein, low-carb breakfast packed with fluffy eggs, sautéed vegetables, and melty cheese. YOU WILL NEED:
4 large eggs
¼ cup heavy cream
½ cup bell peppers, diced (red, yellow, or green)
½ cup baby spinach, chopped
¼ cup mushrooms, sliced
¼ cup shredded cheddar or feta cheese
1 tbsp butter or olive oil
½ tsp garlic powder
¼ tsp salt
¼ tsp black pepper
INSTRUCTIONS:
Whisk the Eggs – In a bowl, whisk together eggs, heavy cream, garlic powder, salt, and black pepper.
Sauté the Veggies – In a skillet over medium heat, melt the butter or heat the olive oil. Add bell peppers and mushrooms, cooking until softened (about 3-4 minutes). Stir in spinach and cook for another minute until wilted.
Cook the Eggs – Pour the egg mixture over the vegetables. Let it set slightly, then gently stir with a spatula, cooking until just firm but still soft.
Add Cheese – Sprinkle shredded cheddar or feta cheese over the scramble, allowing it to melt. Remove from heat.
Serve – Plate the scramble and enjoy warm!
