Sausage & Roasted Vegetable Skillet

This easy and flavorful one-pan dish combines savory sausage with roasted vegetables like bell peppers, zucchini, and onions, all cooked in olive oil for a satisfying, low-carb meal. It's full of protein, fiber, and healthy fats to keep you full and energized!







YOU WILL NEED:

  • 2 medium sausages (preferably chicken or turkey for lower fat)

  • 1 zucchini, sliced

  • 1 bell pepper, sliced

  • 1 small onion, sliced

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • Fresh parsley for garnish (optional)




INSTRUCTIONS:

  1. Preheat oven to 400°F (200°C).

  2. Prepare the vegetables: Slice the zucchini, bell pepper, and onion into bite-sized pieces. Place them on a baking sheet and drizzle with olive oil. Season with garlic powder, oregano, salt, and pepper. Toss to coat evenly.

  3. Cook the sausage: In a skillet over medium heat, cook the sausages until browned and cooked through (about 7-10 minutes). Slice them into rounds.

  4. Roast the vegetables: While the sausage cooks, roast the vegetables in the preheated oven for about 20-25 minutes, or until tender and slightly caramelized.

  5. Combine: Add the sliced sausages into the roasted vegetables and stir everything together. Cook for an additional 2-3 minutes on low heat to combine the flavors.

  6. Serve: Garnish with fresh parsley if desired and enjoy!

Serving Suggestions: Serve with a side of mixed greens or a small avocado for extra healthy fats.
